How to Store Fresh Mushrooms

Fresh mushrooms keep beautifully with three simple rules: keep them cold, keep them dry, and let them breathe.

The three rules

Cold: straight into the fridge when your box arrives. Dry: never wash mushrooms before storing — moisture is what turns them; clean them just before cooking instead. Breathing: store them in a paper bag or loosely covered in their box, never sealed in plastic, which traps condensation.

How long they keep

Most of the varieties in your box are at their best within a week of arrival. Pink oysters are the sprinters of the mushroom world — cook those first, within a few days. Grey and yellow oysters, wild chestnuts and Lion's Mane will happily wait a little longer.

If you can't cook them in time

Cook them anyway — sautéed mushrooms keep in the fridge for three days and freeze well, ready to drop into pasta, risotto or soup. Or dry them: sliced thin and dried low in the oven, they keep for months and their flavour concentrates beautifully.

A note on appearance

Mushrooms are a fresh crop, not a factory product. Small colour variations, a slightly dry edge or a bit of substrate at the base are all normal. If anything ever arrives genuinely damaged, send us a photo within 24 hours and we'll make it right.
