Pink Oyster "Bacon"

Pink oysters are the one mushroom that genuinely crisps like bacon — smoky, salty, shatteringly thin. If your box has pink clusters in it this week, this is what they're for.

Method

  1. Mix the oil, soy, maple syrup and paprika in a bowl. Toss the strips through until coated.
  2. Lay them flat in a large frying pan over a medium heat — no crowding.
  3. Cook for 4–5 minutes each side, pressing occasionally, until deeply browned and crisping at the edges. They crisp further as they cool, like real bacon.
  4. Grind over pepper and use anywhere bacon goes: butties, big weekend breakfasts, crumbled over pasta or salads.
