Pink Oyster "Bacon"
Pink oysters are the one mushroom that genuinely crisps like bacon — smoky, salty, shatteringly thin. If your box has pink clusters in it this week, this is what they're for.
Method
- Mix the oil, soy, maple syrup and paprika in a bowl. Toss the strips through until coated.
- Lay them flat in a large frying pan over a medium heat — no crowding.
- Cook for 4–5 minutes each side, pressing occasionally, until deeply browned and crisping at the edges. They crisp further as they cool, like real bacon.
- Grind over pepper and use anywhere bacon goes: butties, big weekend breakfasts, crumbled over pasta or salads.
