Lion's mane skewers over coals

BBQ Lion's Mane Skewers

Lion's Mane holds a skewer better than halloumi and takes on smoke like meat does. These are the skewers that convert the barbecue sceptics.

Ingredients

  • 400g fresh Lion's Mane, torn into golf-ball chunks
  • 3 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 garlic clove, grated
  • Juice of ½ a lemon
  • Sea salt and black pepper
  • 4 metal or soaked wooden skewers

Method

  1. Whisk the oil, paprika, oregano, garlic, lemon juice and a good pinch of salt and pepper in a large bowl.
  2. Toss the Lion's Mane chunks in the marinade until coated, then thread snugly onto skewers.
  3. Cook over medium-hot coals (or a griddle pan on high) for 10–12 minutes, turning every few minutes, until charred at the edges and tender in the middle.
  4. Brush with any leftover marinade as they come off the heat, and finish with a squeeze more lemon.
