Caramelised Lion's Mane with Smoky Beans
Deeply golden Lion's Mane over paprika-spiked white beans — a one-pan lunch that eats like something you'd order out.
Method
- Heat 1 tablespoon of oil in a wide pan over a medium-high heat. Cook the Lion's Mane chunks for 5–6 minutes, turning occasionally, until caramelised all over. Season and set aside.
- Add the remaining oil and the onion to the pan and soften for 4–5 minutes.
- Add the garlic and paprika, cook for 1 minute, then tip in the beans with their liquid. Simmer for 5 minutes until creamy, mashing a few beans against the pan.
- Season the beans with salt, pepper and lemon juice. Spoon into bowls, pile the Lion's Mane on top and finish with parsley and a drizzle of olive oil.
