Caramelised lion's mane over smoky beans

Deeply golden Lion's Mane over paprika-spiked white beans — a one-pan lunch that eats like something you'd order out.

Method

  1. Heat 1 tablespoon of oil in a wide pan over a medium-high heat. Cook the Lion's Mane chunks for 5–6 minutes, turning occasionally, until caramelised all over. Season and set aside.
  2. Add the remaining oil and the onion to the pan and soften for 4–5 minutes.
  3. Add the garlic and paprika, cook for 1 minute, then tip in the beans with their liquid. Simmer for 5 minutes until creamy, mashing a few beans against the pan.
  4. Season the beans with salt, pepper and lemon juice. Spoon into bowls, pile the Lion's Mane on top and finish with parsley and a drizzle of olive oil.
