Lion's Mane "Scallops" in Garlic Butter

Lion's mane rounds searing in butter

Cut into rounds and seared in foaming garlic butter, Lion's Mane turns golden and tender with the same satisfying bite as a scallop. A ten-minute starter that looks like restaurant food.

Method

  1. Cut the Lion's Mane into thick rounds — a small round cutter makes them neat, but a knife works fine.
  2. Heat a frying pan over a medium-high heat. Sear the rounds dry for 2–3 minutes each side until golden.
  3. Add the butter, oil and garlic. When the butter foams, baste the rounds for 2–3 minutes until deeply golden.
  4. Season, squeeze over the lemon, scatter with parsley and serve hot — on their own, on toasted sourdough, or stirred through pasta.
