Lion's Mane "Scallops" in Garlic Butter
Cut into rounds and seared in foaming garlic butter, Lion's Mane turns golden and tender with the same satisfying bite as a scallop. A ten-minute starter that looks like restaurant food.
Method
- Cut the Lion's Mane into thick rounds — a small round cutter makes them neat, but a knife works fine.
- Heat a frying pan over a medium-high heat. Sear the rounds dry for 2–3 minutes each side until golden.
- Add the butter, oil and garlic. When the butter foams, baste the rounds for 2–3 minutes until deeply golden.
- Season, squeeze over the lemon, scatter with parsley and serve hot — on their own, on toasted sourdough, or stirred through pasta.
