Spice-Crusted Lion's Mane Rounds
A dry spice rub and a hot griddle give Lion's Mane a crust worth talking about. Great in wraps, on grain bowls, or as the centrepiece with sides.
Method
- Mix the spices with a good pinch of salt and pepper. Brush the rounds with oil and press the spice mix onto both sides.
- Heat a griddle pan (or heavy frying pan) over a high heat until smoking hot.
- Cook the rounds for 3–4 minutes each side, pressing down for good contact, until the crust is dark and the middle is tender.
- Rest for a minute, then serve — in flatbreads with yoghurt and pickles, or over couscous with a squeeze of lemon.
