What does โ€œpoppedโ€ mean?

Popping is our own fast drying method. It takes the water out of the fresh Lion's Mane quickly, at a temperature that never cooks it, so the mushroom's fibrous structure and savoury flavour stay intact. Slow dried mushrooms often go leathery. Popped Lion's Mane rehydrates firm and meaty.

How do I cook Popped Lion's Mane?

Rehydrate what you need in hot water or stock for 20 to 30 minutes. Squeeze gently, season and cook. Sear it hard in butter and garlic, fry it a little longer until the edges crisp, or pull it into strands for pulled style dishes. Or skip the soak and add it straight to soups, stews and slow cooks.

Do I need to rehydrate it?

For pan cooking, yes. 20 to 30 minutes in hot water or stock. For soups, stews and slow cooks, no. Add it straight from the pouch and it rehydrates in the pot, soaking up the flavour of the dish as it goes.

How long does it keep?

Six months in the resealable pouch. Somewhere cool and dry, ziplock closed tightly after each use. No fridge needed.

What does it taste like?

Deeply savoury but delicate. A subtle, almost seafood like umami. It takes on butter, garlic and stock beautifully.

Should I buy Fresh or Popped?

Fresh for the delicate experience this week. Popped for a firmer, meatier bite that's always in the cupboard.

Exactly what I wanted.

These will be useful when I haven't got the fresh mushrooms around. They looked good, too. Not broken up so will look even better in pasta sauces and dishes like casseroles where sometimes a bit of visual energiser is a real bonus. I shall reconstitute and then fry to add at the last minute. I think mushrooms added at the firat stage lose their identity in taste and appearance. Soups that need a different garnish. Altogether I am quite sparked up. I have just thought of another - stroganoff.......

we really enjoy this variety for making 'steaks' and in stir fry. Nice big pieces, have not used the dry bonus yet.

Excellent mushrooms

This is the second box of lions Mane and shiitake mushrooms I have received from The Mushroom Barn - and they are delicious! They are versatile and nutritious and seem to give me energy and a lifted mood - they arrived in a neat box, well packaged and very fresh - I will definitely order more ๐Ÿ˜Ž
