Garlic Butter Lion's Mane Steaks
The recipe to start with. Thick slices of Lion's Mane, seared hard in a dry pan, then finished in garlic butter — crisp edges, tender middle, ready in a quarter of an hour.
Method
- Slice the Lion's Mane into steaks about 2cm thick. Don't wash it — brush off any growing substrate with your fingers or a dry cloth.
- Heat a dry frying pan over a medium-high heat. Lay the steaks in with no oil and press them down gently with a spatula. Cook for 3–4 minutes each side to drive off moisture — they should be turning golden.
- Add the oil, butter, garlic and thyme to the pan. When the butter foams, tilt the pan and spoon it over the steaks for 2–3 minutes until they're deep golden and crisp at the edges.
- Season generously with salt and pepper and serve straight away — over mash, in a bun, or next to your Sunday roast.
