Pulled Lion's Mane Tacos
Lion's Mane tears into strands just like slow-cooked pork — except this version takes twenty minutes, not eight hours. Smoky, sticky and built for taco night.
Method
- Tear the Lion's Mane into rough strands with your hands — thumb-width pieces work best.
- Heat a large frying pan over a high heat with no oil. Add the strands and cook for 4–5 minutes, pressing them down, until they've released their moisture and started to colour.
- Add the oil, paprika, cumin and garlic granules and toss for 2 minutes until fragrant and browning at the edges.
- Stir in the BBQ sauce with a splash of water and cook for another 2 minutes until sticky and glazed.
- Pile into warm tortillas and finish with lime, coriander, red onion and soured cream.
