Teriyaki Lion's Mane Rice Bowl
A fakeaway bowl that beats the takeaway version: golden Lion's Mane in a quick homemade teriyaki, over rice with something crunchy on the side.
Method
- Stir the soy, honey, vinegar, garlic and ginger together with 2 tablespoons of water — that's your teriyaki.
- Heat a large frying pan over a medium-high heat with no oil. Sear the Lion's Mane slices for 3–4 minutes each side until golden.
- Add the oil and cook for another 2 minutes to crisp the edges.
- Pour in the sauce and let it bubble for 2–3 minutes, turning the pieces until they're glossy and coated.
- Serve over rice with the cucumber, spring onion and a scatter of sesame seeds, spooning any extra glaze from the pan over the top.
